Artichokes can be kept in the fridge for 4-5 days in a paper bag. Once cleaned and sliced, they can also be frozen. In order to clean them, you have to remove the hard outer leaves. To prevent them from blackening, you need to rub your hands against some lemon. Now, cut the tip and, once you reach its tender part, remove the stem end and any thorns. Cut the artichoke in half and discard the beard. You can consume raw artichokes, cutting them into julienne strips, or cook them in a pan or even leave the whole artichoke, discarding it from the beard with a spoon and stuffing it with a filling of your choice.
